Rodák ze švédského Karlstadu Stella prošel kompletní mládežnickou základnou Färjestadu. Postupně prošel až do juniorského výběru, a následně se vydal do zámoří, kde odehrál 81 utkání v USHL za Dubuque Fighting Saints.
Od roku 2021 nastupoval zejména v NCAA za American International College a ve 150 duelech zaznamenal 36 kanadských bodů (6+30). V posledním ročníku byl kapitánem týmu a čtyři utkání odehrál i za Bloomington Bison v ECHL.
Cosgrove většinu své kariéry strávil v soutěžích ve Spojených státech, ale vyzkoušel si také sezónu v Kanadě a poslední ročník strávil ve Švédsku.

Kariéru začínal v týmu Phillips Exeter Academy, hrajícím USHS-Prep, kde před odchodem zastával i roli kapitána. Následně se na rok přesunul do kanadského Alberni Valley Bulldogs a v 53 zápasech British Columbia Hockey League zaznamenal 49 kanadských bodů (16+33).
Od sezóny 2017/18 nastupoval v NCAA za Colgate University, kde strávil dohromady čtyři ročníky, dokud nezamířil na Northern Michigan University, v jejímž dresu se začal výrazněji bodově prosazovat a za 37 duelů zaznamenal bilanci devíti gólů a devatenácti asistencí.
Mezi lety 2022 až 2024 střídal starty v Bridgeport Islanders z AHL a Worcester Railers z ECHL, dokud se v posledním ročníku nepřemístil na svou první evropskou štaci v životě do Kalmar HC, hrajícím švédskou Hockey Allsvenskan. V 56 zápasech nasbíral 35 kanadských bodů (6+29).
