En España hay repartidos miles de establecimientos de restauración, pero sólo unos pocos logran un éxito como el alcanzado por el Asador Etxebarri, que acaba de ser galardonado con el segundo puesto en la 23ª edición de The World’s 50 Best Restaurants. Esto, a su vez, le convierte en el mejor de Europa, ya que el primer puesto ha ido a parar a Maido, en Lima.
La ciudad italiana de Turín acogió el pasado jueves, 19 de junio, en el Auditorium Giovanni Agnelli, el evento donde se iba a conocer qué restaurantes serían los elegidos entre los 50 mejores. Allí se desveló el hito alcanzado por Asador Etxebarri, situado en un pequeño pueblo del País Vasco.

Los ojos de todo el mundo de la gastronomía ahora están fijados en el municipio de Axpe Achondo -Valle Achondo, de poco más de 1.400 habitantes. A pesar de su exiguo tamaño y su aparente falta de atractivos turísticos, el logro del Asador Etxebarri bien puede ayudar a situar en el mapa este pueblo.

Bittor Arguinzoniz se encarga de variar su menú tras cada temporada y, aunque sus precios no están al alcance de todos los bolsillos, el coste de comer en un lugar de tanto renombre se ve compensado con la calidad del producto. Por 280 euros, los clientes que acceden al Asador Etxebarri son capaces de ingerir productos exquisitos y con las brasas como protagonistas.
Las reservas se realizan a través de su página web, donde advierten que, “debido al gran volumen de solicitudes que recibimos, le pedimos paciencia”. Desde el Asador Etxebarri explican los pasos a seguir: “Si su solicitud ha sido confirmada, nos pondremos en contacto con usted por correo electrónico en un plazo de 7 días (…) Si no recibe la confirmación dentro de los 7 días posteriores al envío de la solicitud, es porque no tenemos disponibilidad en la fecha y hora elegida. En ese caso, le añadiremos a nuestra lista de espera y nos pondremos en contacto con usted si se liberase un hueco”.
En el restaurante se pueden hallar productos típicos como, por ejemplo: chorizos, anchoas en salazón, kokotxa de bacalao, tartar de chorizo negro, topinambur o chuleta de vaca, entre otros. En definitiva, todo un sinfín de manjares que, tras pasar por la cocina, llegan a las mesas y conquistan el paladar de cualquiera que cruza sus puertas y, de paso, visita Axpe Achondo -Valle Achondo, en el País Vasco.
